There is something truly magical about a wheel of warm, melty brie coming out of the oven. This recipe takes that indulgence to the next level by drizzling it with golden honey and topping it with the earthy crunch of toasted pecans and fragrant rosemary. It’s the kind of appetizer that looks incredibly sophisticated but requires almost zero effort, making it my go-to for holiday gatherings or a cozy wine night with friends.

The secret here is the contrast between the creamy, slightly earthy cheese and the sweet-and-savory toppings. As the brie bakes, it softens into a velvety pool of goodness that is just begging to be scooped up with a slice of crusty baguette or a crisp apple wedge. Once you bring this to the table, watch it disappear in minutes—it is always the first thing to go!

Ingredients

  • Brie cheese wheel:8 oz
  • Honey:1/4 cup
  • Pecans, chopped:1/3 cup
  • Fresh rosemary, finely minced:1 tsp
  • Sea salt:1/4 tsp
  • Baguette or crackers:1 piece

Instructions

  1. Preheat your oven to 350°F and line a small baking sheet or oven-safe dish with parchment paper.

  2. Place the brie wheel on the prepared baking sheet. Using a sharp knife, gently score the top of the cheese in a crosshatch pattern, being careful not to cut all the way through the rind.

  3. Bake for 10-12 minutes until the cheese feels very soft and starts to bulge slightly but hasn't completely burst.

  4. While the cheese is baking, toss the chopped pecans in a small dry skillet over medium heat for 2-3 minutes until fragrant and toasted.

  5. Remove the brie from the oven and immediately drizzle with the honey. Sprinkle the toasted pecans, minced rosemary, and sea salt over the top.

Tips & Notes

  • Choose a brie that comes in a wooden box if possible; you can bake it right in the box for a beautiful presentation.
  • Don't skip toasting the pecans—it adds a much deeper, nuttier flavor that balances the sweetness of the honey.
  • If you prefer a kick, add a pinch of red pepper flakes to the honey before drizzling.
