These Cold Watermelon Mint Bites are a celebration of summer in one easy, bite-sized snack — juicy watermelon, cool mint, tangy feta and a bright hit of lime. They’re fast to assemble, refreshingly light, and always disappear first at a picnic or party.

I love making a platter of these when friends come over: they look elegant but require almost no fuss. Play with textures — swap pistachios for toasted almonds, use a basil leaf instead of mint, or make a honey-lime glaze for a touch of sweetness.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes:6 cups
  • Fresh mint leaves, small:12 pieces
  • Feta cheese, block, cut into small 1/2-inch cubes:4 oz
  • Fresh lime juice:2 tbsp
  • Lime zest:1 tsp
  • Honey (optional):1 tbsp
  • Sea salt:1/4 tsp
  • Freshly cracked black pepper:1 pinch
  • Toasted pistachios, chopped (optional):2 tbsp
  • Toothpicks or small skewers:24 pieces

Instructions

  1. Chill the cubed watermelon in the fridge for at least 30 minutes before assembling for the best refreshing bite.

  2. If using honey, whisk together lime juice, lime zest and honey in a small bowl until smooth. Taste and adjust sweetness.

  3. Thread one watermelon cube, a small mint leaf (folded if large), and a cube of feta onto each toothpick or skewer. Aim for two or three pieces per skewer depending on size.

  4. Arrange the skewers on a platter, drizzle lightly with the lime-honey (or just lime) mixture, then sprinkle with sea salt, a tiny pinch of black pepper, and chopped toasted pistachios if using.

  5. Serve immediately, or cover and chill up to 1 hour before serving. These are best cold and eaten the same day.

Tips & Notes

  • Use a ripe but firm watermelon so the cubes hold their shape on skewers.
  • If you prefer a saltier bite, substitute feta cubes with marinated feta or halloumi cubes (grill halloumi briefly first).
  • Prep the components ahead — cube watermelon and feta, store separately on paper towels to avoid sogginess, then assemble before serving.
