These Cold Watermelon Mint Bites are a celebration of summer in one easy, bite-sized snack — juicy watermelon, cool mint, tangy feta and a bright hit of lime. They’re fast to assemble, refreshingly light, and always disappear first at a picnic or party.

I love making a platter of these when friends come over: they look elegant but require almost no fuss. Play with textures — swap pistachios for toasted almonds, use a basil leaf instead of mint, or make a honey-lime glaze for a touch of sweetness.

Directions

  • Toasted pistachios, chopped (optional):2 tbsp
  • Toothpicks or small skewers:24 pieces

Tips & Notes

  • Use a ripe but firm watermelon so the cubes hold their shape on skewers.
  • If you prefer a saltier bite, substitute feta cubes with marinated feta or halloumi cubes (grill halloumi briefly first).
