This yogurt bark is one of my favourite quick snacks — creamy Greek yogurt sweetened just enough with a drizzle of honey, spread thin and frozen until firm, then topped with bright berries, crunchy almonds and chia for texture. It’s simple, refreshing, and perfect for prepping ahead when you want something healthy and satisfying.
I love how flexible this is: swap the almonds for pistachios, use maple syrup instead of honey, or scatter dark chocolate chips for an indulgent twist. Each shard is under 300 calories and delivers a balanced mix of protein, healthy fats, and fiber.

Line a baking sheet (about 9x13 in) with parchment paper, leaving an overhang for easy lift-out.

In a bowl, stir together the Greek yogurt, honey, vanilla extract, salt, and lemon zest (if using) until smooth and slightly sweetened.

Spread the yogurt mixture evenly on the prepared baking sheet to about 1/4-inch thickness.

Scatter the mixed berries, toasted almonds, and chia seeds evenly over the top, gently pressing toppings into the yogurt so they stick.

Freeze until completely firm, at least 4 hours or overnight for best texture.

Lift the frozen yogurt slab from the sheet using the parchment overhang and break into shards or cut into pieces. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

- For creamier bark, let the frozen yogurt sit 3–5 minutes at room temperature before serving so it’s easier to bite.
- Use a thin layer—about 1/4 inch—to get a crisp snap; thicker layers take longer to freeze and can be denser.
