These lemon coconut popsicles are a sunshiny combination of tangy lemon, silky coconut, and a glossy honey swirl that feels like summer in every bite. Ingredients

  • Light canned coconut milk:13.5 oz
  • Plain nonfat Greek yogurt:1/2 cup
  • Fresh lemon juice:1/2 cup
  • Lemon zest:1 tbsp
  • Honey (for base):3 tbsp

  • Pure vanilla extract:1 tsp
  • Salt:1/8 tsp
  • Water (to loosen mixture if needed):1/4 cup
  • Toasted unsweetened shredded coconut (optional garnish):2 tbsp

Instructions

  1. In a medium bowl whisk together light coconut milk, Greek yogurt, lemon juice, lemon zest, 3 tbsp honey, vanilla, and salt until smooth. Taste and add a little more honey if you prefer sweeter.

  2. If the mixture seems too thick, stir in up to 1/4 cup water a tablespoon at a time to reach a pourable but creamy consistency.

  3. Spoon about a tablespoon of the base mixture into each popsicle mold, then add a thin stream of the reserved 2 tbsp honey. Swirl gently with a skewer or small spoon to create a marbled effect, then finish filling the molds.

  4. Tap molds lightly on the counter to remove air bubbles, insert sticks, and freeze until solid, at least 4 hours or overnight for best texture.

  5. To unmold, run warm water over the outside of the molds for 20–30 seconds, then gently pull the popsicles free. Sprinkle with toasted shredded coconut and extra lime zest if you like.
