These Mango Coconut Popsicles are one of those recipes I make all summer long — simple, bright, and impossibly creamy. Ripe mangoes blended with coconut milk, a touch of honey and lime, and a spoonful of yogurt create pops that taste like a mini tropical getaway.

They’re kid-friendly, easy to customize (use maple or agave instead of honey), and perfect for hot afternoons or a casual backyard party. I’ll walk you through a quick blender method and a pretty swirl option for pops that look as good as they taste.

Ingredients

  • 2 cups Ripe mango, peeled and chopped
  • 1 cup Canned coconut milk (shake well)
  • 1/2 cup Plain Greek yogurt
  • 2 tbsp Honey (or maple syrup)
  • 1 tbsp Fresh lime juice
  • 1 tsp Lime zest
  • 1 tsp Vanilla extract
  • 1/8 tsp Salt
  • 2 tbsp Toasted shredded coconut (optional garnish)
  • 8 pieces Popsicle sticks

Instructions

  1. Place the chopped mango, coconut milk, Greek yogurt, honey, lime juice, lime zest, vanilla, and salt in a blender. Blend until smooth and creamy, pausing to scrape down the sides if needed.

  2. Taste and adjust sweetness or lime — add up to 1 tbsp more honey or a little more lime juice to brighten, if desired.

  3. For a simple creamy pop: pour the mango-coconut mixture evenly into 8 popsicle molds, leaving a little headspace for expansion. Tap the molds gently on the counter to remove air bubbles.

  4. For a pretty swirl: pour half the mixture into molds, then add a spoonful of reserved blended mixture slightly thickened (blend for a few extra seconds) and use a skewer to swirl once or twice; avoid over-mixing so you keep distinct streaks.

  5. Insert popsicle sticks (or secure lid) and freeze upright until solid, at least 6 hours or overnight for best texture.

  6. To unmold, run warm water over the outside of the molds for 10-20 seconds and gently pull the pops out. Sprinkle with toasted shredded coconut before serving, if using.

Tips & Notes

  • If mangoes are out of season, thawed frozen mango chunks work great and give a thicker texture.
  • Use full-fat canned coconut milk for the creamiest pops; shake the can well before measuring.
  • To speed unmolding, let pops sit at room temperature for 1-2 minutes before running under warm water.
