Rice paper wrappers bake into a light, crackly shell around a savory vegetable and tofu filling for a fresh, satisfying appetizer or light meal.
Crispy rice paper rolls take the familiar spring roll wrapper in a warmer, crunchier direction. Instead of serving the rice paper soft, the rolls are brushed lightly with oil and baked until the outside turns blistered, glassy, and crisp.
The filling is built from cabbage, carrots, mushrooms, scallions, garlic, and crumbled tofu. Cooking the vegetables first drives off extra moisture, which is the key to keeping the wrappers from tearing or turning soggy in the oven.
Rice paper can feel delicate at first, but a shallow dip in warm water and a short rest on the board make it flexible without becoming slippery. Double wrapping gives each roll more structure and helps create the shattering, chewy-crisp shell.
Serve the rolls while hot with a simple lime-soy dipping sauce. They work well as a party appetizer, a lunch with salad, or a lighter dinner alongside herbs, cucumber, and extra chili sauce.

Heat the oven to 425°F and line a large baking sheet with parchment paper. Crumble the tofu into small pieces with your hands.

Warm 1 teaspoon sesame oil in a large skillet over medium-high heat. Add the tofu and cook for 4 to 5 minutes, stirring often, until lightly browned and drier around the edges.

Add the cabbage, carrot, mushrooms, scallions, garlic, and ginger. Cook for 5 to 6 minutes, until the vegetables soften and most of their liquid evaporates.

Stir in 1 tablespoon soy sauce, the rice vinegar, and the cornstarch. Cook for 1 minute, then spread the filling on a plate and let it cool until just warm.

Fill a wide shallow dish with warm water. Dip 1 rice paper wrapper for 5 to 7 seconds, place it on a damp board, and let it soften for another 20 seconds.

Spoon about 3 tablespoons filling across the lower third of the wrapper. Fold in the sides, roll it up tightly, then wrap it in a second briefly soaked rice paper wrapper for extra crispness.

Place the roll seam side down on the prepared baking sheet. Repeat with the remaining wrappers and filling, spacing the rolls so they do not touch.

Brush the rolls all over with neutral oil. Bake for 20 to 25 minutes, turning once after 15 minutes, until the wrappers are blistered, crisp, and lightly golden in spots.

Whisk the remaining 1 tablespoon soy sauce with lime juice, warm water, maple syrup or honey, chili garlic sauce, and the remaining 1 teaspoon sesame oil.

Tips & Notes
- Do not oversoak the wrappers; they should still feel a little firm when they leave the water.
- Cool the filling before rolling so steam does not weaken the rice paper.
- Keep finished rolls separated on the baking sheet, because touching edges will steam instead of crisp.
- For a gluten-free version, use tamari instead of soy sauce.
