This Peanut Butter Banana Toast is one of those feel-good breakfasts that comes together in minutes but tastes like you fussed for hours. Creamy peanut butter, ripe banana slices, a sticky drizzle of honey and a scattering of seeds give you sweetness, crunch and staying power—perfect for busy mornings or an easy, comforting snack.

I love it because it’s endlessly adaptable: swap almond butter, use a seeded or whole-grain loaf, add a pinch of cinnamon or a squeeze of lemon for brightness. It’s simple, nourishing, and always hits the spot when you want something both cozy and quick.

Ingredients

  • sourdough or whole-grain bread:2 slices
  • creamy peanut butter:4 tbsp
  • banana, ripe:1 piece
  • honey:2 tbsp
  • chia seeds:1 tsp
  • sunflower seeds:1 tsp
  • flaky sea salt:1 pinch
  • butter or olive oil (optional, for toasting):1 tbsp

Instructions

  1. Toast the bread to your liking on a toaster or in a skillet spread with the optional butter or olive oil until golden and crisp.

  2. Spread 2 tbsp of peanut butter evenly over each slice while the toast is still warm so it softens and spreads easily.

  3. Slice the banana into 1/4-inch rounds and arrange over the peanut butter on both slices.

  4. Drizzle 1 tbsp honey over each toast, then sprinkle chia seeds and sunflower seeds across the tops.

  5. Finish with a light pinch of flaky sea salt to lift the flavors. Serve immediately.

Tips & Notes

  • For extra crunch, toast the seeds briefly in a dry skillet for 1–2 minutes before sprinkling.
  • If you prefer less sweetness, swap honey for a smear of mashed avocado or a sprinkle of lemon zest.
  • Make it vegan by using maple syrup instead of honey and almond or sunflower seed butter in place of peanut.
