Honey Pancakes
These pancakes are my go-to when I want something simple, comforting, and a little bit special. The batter yields light, tender pancakes that soak up a glossy drizzle of honey — no syrup fuss required — and they pair beautifully with a pot of fragrant Earl Grey for a morning that feels like a hug.
They come together quickly with everyday pantry ingredients and are forgiving for home cooks: mix the batter gently, let it rest a few minutes, and cook over medium heat. Serve warm with extra honey, a pat of butter, and a teacup of steeped Earl Grey for the perfect cozy brunch moment.
Ingredients
- 2 cups All-purpose flour
- 2 tsp Baking powder
- 1/4 tsp Baking soda
- 1/2 tsp Salt
- 2 tbsp Granulated sugar
- 1 1/2 cups Milk (whole or 2%)
- 1 pieces Large egg
- 1 tsp Vanilla extract
- 3 tbsp Unsalted butter, melted
- 1 tbsp Vegetable oil (for skillet)
- 1/3 cup Honey (for drizzling)
- 2 tbsp Butter (for serving)
- 4 pieces Earl Grey tea bags
- 4 cups Water (for tea)
- 4 pieces Lemon wedges (optional)
Instructions

Whisk together the flour, baking powder, baking soda, salt, and sugar in a large bowl.

In a separate bowl, whisk the milk, egg, and vanilla until combined, then stir in the melted butter.

Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — a few small lumps are fine. Let the batter rest 5 minutes.

Heat a large nonstick skillet or griddle over medium heat and brush with a little vegetable oil or melted butter.

Pour 1/4 cup batter per pancake onto the hot skillet. Cook until bubbles form on the surface and edges look set, about 2–3 minutes, then flip and cook 1–2 minutes until golden and cooked through.

Meanwhile, bring 4 cups water to a near boil and steep 1 Earl Grey tea bag per cup for 3–4 minutes. Add lemon wedge if you like.
