Baleadas are one of Honduras's most beloved everyday foods: a soft flour tortilla folded around refried beans, cheese, and a generous swipe of cream. This version keeps the filling classic and approachable, with creamy red beans, salty crumbled cheese, and warm tortillas that stay flexible enough to fold without cracking.

The beans should be smooth but not soupy, so they spread across the tortilla and hold the cheese in place. A little onion, garlic, and cumin give canned red beans a deeper flavor, while a splash of bean liquid keeps the texture soft enough for spooning.

For the most familiar baleada flavor, use Central American mantequilla or thick crema if you can find it. Sour cream thinned with a spoonful of milk makes a useful stand-in, especially when balanced by a salty fresh cheese such as queso duro, queso fresco, or cotija.

Serve baleadas as soon as the tortillas are warmed and folded. They are usually eaten by hand, often for breakfast or a quick lunch, and they welcome simple additions like scrambled eggs, avocado, or hot sauce without losing the comfort of the original beans-and-cheese filling.

Tips & Notes

  • If the beans become too thick, stir in warm water a tablespoon at a time until they spread easily.
  • Use the largest, softest flour tortillas available; small or stiff tortillas are harder to fold neatly.
  • For baleadas con todo, add scrambled eggs, sliced avocado, or a little cooked chorizo before folding.
