There is something absolutely addictive about the crunch of a fresh radish, but when you soak them in a bright, zingy marinade, they transform into something truly spectacular. This recipe leans into that classic sweet-and-sour profile with a touch of warmth from fresh ginger and a tiny kick of heat from red pepper flakes. It's the kind of side dish that wakes up your palate and adds a vibrant pop of color to any plate.

I love keeping a jar of these in my fridge because they are incredibly versatile. They aren’t just for snacking; try piling them onto a banh mi sandwich, scattering them over a fresh poke bowl, or using them to cut through the richness of grilled carnitas tacos. Best of all, they only take about ten minutes of active work and are ready to eat in under an hour, though they only get better as they sit.

Ingredients

  • Radishes, thinly sliced:1 lb
  • Rice vinegar:½ cup
  • Water:¼ cup
  • Honey:2 tbsp
  • Sea salt:1 tsp
  • Fresh ginger, grated:1 tbsp
  • Garlic clove, smashed:1 piece
  • Red pepper flakes:½ tsp

  1. Wash the radishes thoroughly, trim the ends, and slice them into thin rounds using a mandoline or a sharp knife.

Tips & Notes

  • For a prettier presentation, use a mix of red radishes and watermelon radishes.
  • If you prefer a vegan version, you can easily swap the honey for agave nectar or maple syrup.
  • Slicing the radishes very thin allows the marinade to penetrate faster, making them ready to eat in half the time.
