Somloi galuska is one of Hungary's best-known celebration desserts: soft spoonfuls of sponge cake layered with syrup, walnuts, raisins, vanilla cream, chocolate sauce, and whipped cream. This version keeps the classic flavors but builds them in a trifle dish so the layers are easy to assemble and serve at home.

Traditional versions often use several sponge batters, including cocoa and walnut sponge. Here a single tender vanilla sponge is split and layered with a cocoa-walnut filling, which gives the same contrast without asking for three separate cakes. A warm rum-raisin syrup soaks into the sponge and keeps the dessert moist without turning it soggy.

The pastry cream should be thick enough to hold soft layers but still spoonable. Let it cool before assembly, then chill the finished trifle so the syrup, walnuts, cream, and chocolate sauce settle into the cake. The dessert cuts loosely rather than neatly, which is part of its appeal.
