These minced turkey patties are a weeknight staple I love making for kids: tender, mild-flavored patties studded with finely grated carrot, spinach, and a little cheddar so they taste familiar but pack in nutrition. They brown up beautifully and stay juicy thanks to a touch of milk and an egg—perfect hand-sized portions for small fingers.

They come together fast and are forgiving to shape, plus you can bake or pan-fry them. Serve with a simple yogurt dip, ketchup, or apple slices for a balanced plate; they freeze and reheat well, making them a great meal-prep option the whole family will gobble up.

Ingredients

  • Ground turkey (93% lean):1 lb
  • Fresh breadcrumbs:1/2 cup
  • Shredded mild cheddar:1/2 cup
  • Carrot, finely grated:1/2 cup
  • Baby spinach, finely chopped:1/2 cup
  • Yellow onion, finely minced:1/4 cup
  • Large egg:1 piece
  • Milk:2 tbsp
  • Garlic, minced:1 clove
  • Salt:1/2 tsp
  • Black pepper:1/4 tsp
  • Paprika:1/4 tsp
  • Dried oregano:1/4 tsp
  • Olive oil (for frying):2 tbsp

Instructions

  1. In a large bowl combine ground turkey, breadcrumbs, shredded cheddar, grated carrot, chopped spinach, minced onion, garlic, egg, milk, salt, pepper, paprika, and oregano. Mix gently with your hands until just combined—avoid overworking.

  2. Divide the mixture into 8 equal portions and form into small patties about 2.5 inches across and slightly flattened so they cook evenly.

  3. Chill the formed patties in the fridge for 10 minutes to help them hold together (optional but helpful).

  4. Heat olive oil in a large skillet over medium heat. When shimmering, add patties without crowding and cook 4–5 minutes per side until golden and an instant-read thermometer reads 165°F in the center.

  5. Transfer cooked patties to a paper-towel-lined plate to drain briefly, then let rest 2 minutes before serving so juices redistribute.

Tips & Notes

  • Make them in bulk and freeze raw patties separated on a tray; transfer to a freezer bag for quick dinners—cook from frozen, adding a few minutes per side.
  • For an oven method, bake on a parchment-lined sheet at 400°F for 12–15 minutes, flipping halfway, until internal temp reaches 165°F.
  • To hide more veggies, finely grate zucchini or sweet potato and squeeze out excess moisture before mixing.
  • Serve with mild yogurt-dill dip, applesauce, or carrot sticks to encourage picky eaters.
