This Lemon Garlic Tofu Scramble is my favorite way to refuel without feeling weighed down. It is light, vibrant, and packed with plant-based protein. The extra-firm tofu provides a satisfying texture that mimics scrambled eggs beautifully, while the turmeric and fresh lemon add a bright, anti-inflammatory punch that helps your body recover.

Ingredients

  • Extra-firm tofu, drained and pressed:14 oz
  • Olive oil:1 tbsp
  • Garlic, minced:2 cloves
  • Fresh baby spinach:2 cups
  • Nutritional yeast:2 tbsp
  • Ground turmeric:½ tsp
  • Feta cheese, crumbled:¼ cup
  • Lemon juice:1 tbsp
  • Salt and black pepper:to taste

Instructions

  1. Pat the pressed tofu dry with paper towels and crumble it into bite-sized pieces using your hands or a fork.

  2. Heat the olive oil in a large non-stick skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

  3. Add the crumbled tofu to the skillet. Sprinkle with turmeric and nutritional yeast, then stir well until the tofu is evenly coated and bright yellow.

  4. Cook the tofu for 5-7 minutes, stirring occasionally, until it is heated through and starts to develop slightly golden edges.

  5. Toss the fresh baby spinach into the pan and cook for 1-2 minutes, stirring constantly until the leaves are just wilted.

  6. Remove the skillet from the heat. Stir in the lemon juice and crumbled feta cheese. Season with salt and black pepper to taste and serve immediately.
