These Mushroom and Brie Phyllo Bites are my go-to appetizer when I want to impress without spending hours in the kitchen. The combination of earthy mushrooms and creamy, oozing Brie is absolutely divine, and the crispy phyllo shell provides the perfect textural contrast. They look like you've spent all day preparing them, but honestly, they come together in about thirty minutes.

What makes this recipe so special is how the flavors work together—the mushrooms become deeply caramelized and sweet, the Brie melts into a luxurious filling, and those buttery phyllo shells stay perfectly crisp. Whether you're hosting a dinner party or bringing something to a gathering, these little bites will disappear fast and everyone will ask for your secret.

Ingredients

  • Phyllo dough sheets:6 sheets
  • Unsalted butter:4 tbsp
  • Cremini mushrooms:10 oz
  • Garlic cloves:2 pieces
  • Brie cheese:6 oz
  • Fresh thyme:1 tsp
  • Sea salt:½ tsp
  • Black pepper:¼ tsp
  • Shallots:1 piece

Instructions

  1. Preheat your oven to 375°F. Finely chop the mushrooms, shallot, and garlic. Melt 2 tablespoons of butter and brush your muffin tin cups generously.

  2. Cut phyllo sheets into 3-inch squares. Layer two squares per muffin cup at slight angles, pressing gently into place. Bake for 5-7 minutes until golden and crisp. Remove and set aside.

  3. Heat the remaining 2 tablespoons of butter in a large skillet over medium-high heat. Add the mushroom mixture and sauté for 8-10 minutes until the mushrooms release their liquid and become golden. Season with thyme, salt, and pepper.

Tips & Notes

  • Keep your phyllo dough covered with a damp towel while working to prevent it from drying out.
  • You can prepare the phyllo cups and mushroom filling ahead of time, then assemble and bake just before serving.
  • If you prefer, substitute cremini mushrooms with oyster, shiitake, or a mix of wild mushrooms for deeper flavor.
  • Don't skip the caramelization step for the mushrooms—this is where the magic happens and all those wonderful flavors develop.
