Musakhan is one of the defining dishes of Palestinian home cooking: chicken roasted with warm spices and served over bread soaked with olive oil, onions, and sumac. The flavor is direct and generous, with sweet onions balancing the tart, almost lemony edge of the sumac.
The dish depends on good olive oil and patient onions. Cooking the onions slowly until soft but not browned gives the bread its rich base, while a final roast keeps the chicken skin bronzed and the meat tender. Taboon bread is traditional, but sturdy flatbread, naan, or pita can work well in a home kitchen.
Serve musakhan family-style on a large platter so the bread catches the chicken juices. Toasted pine nuts add crunch, and a spoonful of yogurt or a chopped cucumber-tomato salad alongside keeps the meal bright.
For the best texture, assemble the bread and onions just before serving. The bread should be glossy and flavorful, not soggy, with pieces of roasted chicken and extra sumac scattered over the top.

Heat the oven to 400°F. Pat the chicken dry and place it in a large bowl.

Mix 1/4 cup olive oil with 2 tablespoons sumac, allspice, cinnamon, cumin, salt, and pepper. Rub the mixture over the chicken, including under loose skin where possible.

Spread the chicken on a rimmed baking sheet and roast for 45 to 55 minutes, turning once, until the skin is browned and the thickest pieces reach 175°F.

While the chicken roasts, warm 1/2 cup olive oil in a wide skillet over medium-low heat. Add the onions and cook for 30 to 35 minutes, stirring often, until very soft and sweet but not deeply browned.

Stir the remaining sumac into the onions, then add the chicken stock. Simmer for 3 to 4 minutes until the onions are glossy and spoonable. Taste and adjust salt if needed.

Toast the pine nuts in a small dry skillet over medium heat for 2 to 3 minutes, shaking often, until golden. Transfer them to a plate immediately.

Lower the oven to 350°F. Lay the flatbreads on a large baking sheet, spoon most of the sumac onions and their oil over the bread, and warm for 5 to 7 minutes until the edges are lightly crisp.

Arrange the roasted chicken over the onion-covered bread. Spoon the remaining onions and any chicken pan juices over the top.

Scatter with toasted pine nuts, parsley, and a little extra sumac. Serve hot with lemon wedges.

Tips & Notes
- If using thin pita, stack two pieces before adding the onions so the bread can hold the oil and juices.
- Keep the onion heat moderate; browned onions taste sharper and can distract from the sumac.
- Roasted chicken can rest for up to 20 minutes while the bread is warmed and the platter is assembled.
