Peach Pavlovas
Individual pavlovas with crisp meringue shells, soft marshmallow centers, vanilla whipped cream, and juicy macerated peaches.
Peach pavlovas are built around contrast: a brittle meringue edge, a tender center, cool cream, and ripe fruit that has been given just enough sugar and lemon to make its juices shine. Making them as individual nests keeps serving tidy and gives every plate the right balance of crunch, cream, and peach.
The meringue depends on clean equipment, gradual sugar, and a low oven. Cornstarch and vinegar help the centers stay soft while the outside dries into a delicate shell. Letting the pavlovas cool in the turned-off oven reduces cracking and keeps the texture light instead of sticky.
Use peaches that smell fragrant and yield slightly near the stem. If the fruit is very firm, slice it thinly and let it stand a few extra minutes with sugar; if it is very ripe, fold it gently so the pieces stay intact. A little peach jam in the fruit mixture adds gloss without making the dessert heavy.
Assemble the pavlovas close to serving time. The shells can be baked earlier in the day and kept dry, but once cream and peaches are added, the meringue slowly softens in the best possible way for eating, not for storing.

Heat the oven to 275°F. Line a baking sheet with parchment and trace six 3 1/2-inch circles on the underside, leaving space between them.

Beat the egg whites and salt in a clean bowl on medium speed until foamy, then increase to medium-high and beat until soft peaks form.

Add the granulated sugar 1 tablespoon at a time, beating well after each addition, until the meringue is glossy and the sugar feels mostly dissolved when rubbed between your fingers.

Sift the cornstarch over the meringue, add the vinegar and 1 teaspoon vanilla, and fold gently until no dry streaks remain.

Spoon the meringue onto the marked circles and shape each into a nest with slightly raised edges and a shallow center.

Bake for 15 minutes, then lower the oven to 225°F and bake for 70 minutes, until the pavlovas look dry and lift from the parchment with only a little resistance.

Turn off the oven, prop the door open slightly, and let the pavlovas cool inside for at least 45 minutes before removing them.

While the pavlovas cool, toss the peaches with brown sugar, lemon juice, and peach jam. Let stand for 20 minutes, folding once or twice, until glossy and juicy.

Whip the cold cream with powdered sugar and the remaining 1/2 teaspoon vanilla until soft peaks hold their shape.

Fill each pavlova with whipped cream, spoon peaches and their juices over the top, and finish with toasted almonds and mint.

Tips & Notes
- Separate the eggs while cold, then let the whites come to room temperature before whipping.
- Avoid assembling the pavlovas more than 20 minutes before serving if you want the crispest edges.
- If peaches are not fully ripe, add another teaspoon of lemon juice and let the fruit macerate for 30 minutes.
- Store unfilled meringue shells in an airtight container at room temperature for up to one day.
