Caldo verde is one of Portugal's most familiar comfort soups, built from everyday ingredients and finished with a small amount of flavorful sausage. The base is intentionally modest: potatoes simmered until tender with onion, garlic, broth, and olive oil, then blended until smooth enough to carry the greens.

Traditional versions often use couve galega, a sturdy Portuguese cabbage cut into very fine ribbons. Kale makes a practical substitute because it holds its shape, softens quickly, and gives the soup the same deep green streaks that make the bowl recognizable.

The chorizo is used as a finishing ingredient rather than the bulk of the soup. Browning the slices first gives them crisp edges and lets a little paprika-rich oil season the pot, so each serving tastes smoky without becoming heavy.

Serve caldo verde hot with crusty bread, extra olive oil, and black pepper. The soup thickens as it sits, so leftovers can be loosened with a splash of broth or water while reheating.

    Heat a large soup pot over medium heat. Add the chorizo slices and cook for 3 to 4 minutes, turning once, until lightly browned and the edges begin to crisp.

Tips & Notes

  • Slice the kale as thinly as possible so it softens quickly and distributes evenly through the potato base.
  • For a lighter soup, use turkey or chicken chorizo; for a richer one, use a cured Portuguese-style chourico if available.
  • If the soup becomes too thick after blending, loosen it gradually with hot broth so the seasoning stays balanced.
