Turkey Boats

These turkey and avocado lettuce boats are one of my go-to lunches when I want something fast, satisfying and travel-friendly. They balance lean protein from roasted turkey, creamy avocado and a little sharp cheddar with crunchy veg and sunflower seeds for a bright, fun bite that kids and adults both love.

They’re gluten-free, low in carbs and low in sugar but high in steady energy—ideal for a school lunch. Assemble in under 15 minutes, pack the dressing separately to avoid soggy leaves, and enjoy a wholesome midday meal that keeps afternoons active and focused.

Ingredients

  • 8 pieces Butter lettuce leaves
  • 12 oz Roasted turkey breast, sliced
  • 1 1/2 pieces Avocado
  • 4 oz Sharp cheddar, shredded
  • 1/2 cup Cucumber
  • 1/2 cup Red bell pepper, diced
  • 1/4 cup Greek yogurt
  • 1 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika (mild)
  • 2 tbsp Sunflower seeds
  • 4 pieces Hard-boiled eggs (optional, pre-cooked)

Instructions

  1. Make the quick dressing: whisk together Greek yogurt, lemon juice, Dijon, olive oil, salt, pepper and paprika in a small bowl until smooth.

  2. Warm the turkey: heat a nonstick skillet over medium and quickly warm the sliced turkey 2–3 minutes, just until heated through. Remove from heat.

  3. Prep produce: slice the avocado and cucumber, and dice the red pepper. If using eggs, slice them now.

  4. Assemble boats: lay two lettuce leaves per person on a board. Divide warmed turkey among the leaves, then top with avocado slices, cucumber, red pepper, shredded cheddar and sunflower seeds.

  5. Finish and pack: drizzle a little dressing over each boat or pack dressing in a small container to keep leaves crisp. Add sliced eggs for extra protein if desired. Serve immediately or chill for lunch.

Tips & Notes

  • Pack the dressing separately for school lunches to keep lettuce crisp until mealtime.
  • Use leftover roasted turkey or deli-style roasted turkey for speed; warming is optional but makes the sandwiches feel freshly made.
  • Swap sunflower seeds for pumpkin seeds or a small handful of chopped nuts for extra calorie-dense crunch if you need more energy.
