Caponata is a Sicilian eggplant relish built on contrast: tender eggplant, briny olives and capers, sweet tomato, and a gentle vinegar snap. This version roasts the eggplant instead of frying it, so the pieces keep their shape and take on browned edges without needing a heavy amount of oil.
The base starts with celery, onion, garlic, and tomato simmered just long enough to become glossy and concentrated. Green olives and capers bring the salty backbone, while a spoonful of sugar balances the red wine vinegar in the classic agrodolce style.
Caponata is best after it rests, which makes it useful for entertaining or meal prep. Serve it warm, at room temperature, or chilled over toasted bread, alongside grilled fish, spooned into a grain bowl, or as part of an antipasto spread.
Cut the eggplant into even pieces and avoid crowding the baking sheet. The goal is soft centers and caramelized edges, not dry cubes, so stir once and pull the tray when the pieces are browned and fully tender.
