Spiced Brownies

Dense dark chocolate brownies with espresso, chipotle, cinnamon, and cardamom for a subtle smoky warmth behind the chocolate.

Prep Time:20 minCook Time:30 minTotal Time:50 minServings:24Difficulty:Medium

These brownies are built for people who like a deep chocolate bar more than a cakey square. Melted dark chocolate and butter form the base, while a little espresso sharpens the cocoa flavor without making the brownies taste like coffee.

The spice blend should sit behind the chocolate, not fight it. Chipotle powder brings a smoky warmth, cinnamon rounds the edges, and cardamom adds a quiet floral note. If you want a classic brownie instead, the batter still works when the spices are omitted.

The texture depends on restraint once the eggs are added. Whisk just until each addition disappears, then fold in the dry ingredients with a spatula so the finished brownies stay dense and fudgy instead of turning cakey.

Let the pan cool fully before slicing. Warm brownies are tempting, but a complete cool-down gives the chocolate and butter time to set, producing clean squares with a crackly top and moist crumbs through the center.

Directions

  1. 1
A buttered rectangular baking pan ready for brownie batter.

Heat the oven to 350°F. Butter the bottom and sides of a 9-by-13-inch glass or light-colored metal baking pan.

  2. 2
Flour, cocoa, salt, and spices being whisked in a bowl.

Whisk the flour, salt, cocoa powder, chipotle powder, cinnamon, and cardamom in a medium bowl until the spices are evenly dispersed.

  3. 3
Chocolate and butter melting in a bowl set over simmering water.

Set a large heatproof bowl over a saucepan of gently simmering water. Add the chopped chocolate, butter, and espresso powder and stir occasionally until the mixture is fully melted and smooth.

  4. 4
White and brown sugar being whisked into melted chocolate.

Turn off the heat but leave the bowl over the warm water. Whisk in the granulated sugar and brown sugar until combined, then remove the bowl from the saucepan and let the mixture cool until it is no longer hot.

  5. 5
Eggs being whisked into glossy chocolate brownie batter.

Whisk 3 eggs into the chocolate mixture just until blended. Add the remaining 2 eggs and whisk again just until combined.

  6. 6
Vanilla being added to thick chocolate brownie batter.

Stir in the vanilla. Stop mixing as soon as it is incorporated so the batter does not take on extra air.

  7. 7
Dry ingredients being folded into chocolate batter with a spatula.

Sprinkle the flour mixture over the chocolate mixture. Fold with a spatula until only a few faint streaks of dry ingredients remain.

  8. 8
Brownie batter being smoothed in a prepared baking pan.

Scrape the batter into the prepared pan and smooth the top into an even layer.

  9. 9
A toothpick checking baked brownies for moist crumbs.

Bake in the center of the oven for about 30 minutes, rotating the pan halfway through, until a toothpick inserted in the center comes out with a few moist crumbs attached.

  10. 10
Cooled brownies cut into neat squares in the pan.

Cool completely in the pan before cutting into 24 squares. Store tightly covered at room temperature for up to 3 days.

Ingredients

  • All-Purpose Flour:1 1/4 cups
  • Table Salt:1 teaspoon
  • Dark Unsweetened Cocoa Powder:2 tablespoons
  • Chipotle Powder, or smoky hot paprika for a milder spice:1 to 1 1/2 teaspoons
  • Ground Cinnamon:3/4 teaspoon
  • Ground Cardamom:1/4 teaspoon
  • Dark Chocolate, 60 to 72 percent cacao, coarsely chopped:11 ounces
  • Unsalted Butter, cut into 1-inch pieces:1 cup
  • Instant Espresso Powder:1 teaspoon
  • Granulated Sugar:1 1/2 cups
  • Light Brown Sugar, firmly packed:1/2 cup
  • Large Eggs, at room temperature:5
  • Pure Vanilla Extract:2 teaspoons
  • Unsalted Butter, for the pan:as needed

Tips & Notes

  • Use the smaller amount of chipotle powder if your spice is very fresh or especially hot.
  • Do not let the chocolate mixture stay hot before adding eggs, or the eggs may thicken unevenly.
  • A metal pan usually gives slightly firmer edges, while glass holds heat longer; both work if the brownies are checked by moist crumbs rather than a dry toothpick.
  • For clean cuts, chill the cooled pan for 20 minutes and wipe the knife between slices.
