Instructions

  1. Cut beef into 2-inch chunks and pat dry with paper towels. Season generously with salt and pepper.

  2. Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef in batches for 3-4 minutes per side until golden. Don't overcrowd the pan. Transfer to a plate and set aside.

  3. Slice the onions into thick rings. Add butter to the same pot and sauté onions over medium heat for 8-10 minutes until they begin to soften and turn golden, stirring occasionally.

  4. Mince the garlic and add to the onions along with the flour. Stir well and cook for 1-2 minutes to form a paste.

  5. Add the tomato paste and Worcestershire sauce, stirring constantly for about 1 minute.

  6. Pour in the beef broth, scraping up any browned bits from the bottom of the pot. Return the beef to the pot along with bay leaves and fresh thyme.
