There’s something truly magical about the combination of fresh citrus and succulent shrimp hitting a hot grill. This recipe is my go-to for summer entertaining because it’s incredibly vibrant, light, and comes together in a flash. We’re using a 'triple threat' of lemon, lime, and orange to create a complex acidity that cuts through the richness of the garlic and olive oil, resulting in a perfectly balanced bite every time.

The secret to success here is all in the marinade. By letting the shrimp soak in those bright juices for just 20 minutes, they absorb all that aromatic garlic and citrus zest without the acid 'cooking' the delicate seafood prematurely. Whether you’re firing up the backyard BBQ or using a grill pan on your stovetop, these skewers promise a burst of sunshine on your plate that will have everyone reaching for seconds.

Ingredients

  • Large shrimp, peeled and deveined:1.5 lb
  • Extra virgin olive oil:1/4 cup
  • Garlic, minced:4 cloves
  • Fresh lemon juice:1 tbsp
  • Fresh lime juice:1 tbsp
  • Fresh orange juice:2 tbsp
  • Lemon zest:1 tsp
  • Lime zest:1 tsp
  • Honey or agave nectar:1 tbsp
  • Red pepper flakes:1/2 tsp
  • Kosher salt:1 tsp
  • Black pepper:1/2 tsp
  • Fresh cilantro, chopped:2 tbsp

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, lime juice, orange juice, citrus zests, honey, red pepper flakes, salt, and pepper.

  3. Add the shrimp to the bowl and toss thoroughly to ensure every shrimp is well-coated in the marinade.

  4. Cover and refrigerate the shrimp for 15 to 20 minutes. Avoid marinating longer, as the citrus acid will begin to change the texture of the shrimp.

  5. Preheat your grill or grill pan to medium-high heat and lightly oil the grates.

  6. Thread 4 to 5 shrimp onto each skewer, piercing them through the tail and the head end so they stay secure.

  7. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and have a slight char.

  8. Remove from the heat, garnish with freshly chopped cilantro, and serve immediately with extra lime wedges.

Tips & Notes

  • Pat the shrimp dry with paper towels before adding them to the marinade so the oil and spices stick better.
  • Don't overcrowd the skewers; leaving a tiny bit of space between each shrimp helps them cook evenly and develop a nice sear.
  • For an extra flavor boost, reserve a tablespoon of the marinade (before adding the raw shrimp) to brush on the skewers right before serving.
