Ingredients

  • 1 loaf French baguette or Italian bread
  • 2 cups ripe tomatoes
  • 1 cup bell peppers
  • 1/2 cup cucumber
  • 1/4 cup fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar

  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F. Slice the baguette into 1/2-inch thick slices and arrange on a baking sheet. Toast in the oven for about 5 minutes until golden and crunchy.

  2. Meanwhile, dice the tomatoes, finely chop the bell peppers, and dice the cucumber. Mix them in a bowl with chopped basil.

  3. Add olive oil, balsamic vinegar, salt, and pepper to the vegetable mixture. Stir well to combine.

  4. Remove the bread slices from the oven and let cool slightly. Spoon the vegetable mixture generously onto each toasted bread slice.

  5. Serve immediately, garnished with additional basil leaves if desired, for a fresh and colorful appetizer.
