Baked Brie earns its place at the center of a grazing table because it asks very little of the cook yet feels generous the moment the rind is cut. Here, fresh summer cherries roast until their juices concentrate, then mingle with honey, balsamic vinegar, and thyme in a tart-sweet topping.
Roasting the fruit separately for a few minutes gives the cherries a head start without overcooking the cheese. The Brie joins the pan only after the fruit has begun to soften, so its center turns molten while the wheel still holds its shape.
You can pit and season the cherries several hours ahead, then refrigerate them in the baking dish. Bring the dish close to room temperature while the oven heats, add the Brie at the directed time, and the centerpiece will be ready with minimal last-minute work.

Heat the oven to 400°F. Place the halved cherries in a shallow 9-inch baking dish, keeping them in a loose, even layer.

Drizzle the cherries with the honey and balsamic vinegar. Sprinkle with the thyme leaves, salt, and black pepper, then toss gently until evenly coated.

Roast the cherries for 10 minutes, until they release some juice and begin to soften but still hold their shape.

Remove the dish from the oven and push the cherries toward the edges. Set the Brie in the center and spoon a little of the cherry juice over the top.

Return the dish to the oven and bake for 12 to 15 minutes, until the Brie feels very soft in the center when gently pressed and the cherry juices are bubbling.
