A dry, wine-forward rosé spritzer with crushed summer strawberries, fresh lemon, lively club soda, and just enough honey to round the fruit. Mix it in a pitcher for an effortless warm-weather aperitif.
This pitcher spritzer keeps the character of a dry rosé in the foreground while adding the fragrance and color of ripe strawberries. A brief muddle releases the berries' juice, and a small spoonful of honey softens their natural tartness without turning the drink into a sweet punch.
Fresh lemon sharpens the fruit and helps the spritzer stand up to rich cheeses, buttery pastry, and salty crackers. Club soda is folded in at the last moment so every glass stays light and lively while the wine still tastes distinct.
Chill the rosé, club soda, pitcher, and glasses in advance for the crispest result. The strawberry base can be made up to two hours ahead and refrigerated, but wait to add the bubbles and ice until guests are ready for a drink.

- For an alcohol-free version, replace the rosé with 3 cups chilled alcohol-free sparkling rosé or unsweetened sparkling white grape juice, and omit the club soda if the drink is already very fizzy.
