Using cooked shredded chicken keeps the filling quick and flexible. Rotisserie chicken works well, but leftover roast chicken or poached chicken breast will also fold easily into the sauce without drying out.

Heat the oven to 425°F. Scrub the potatoes well, dry them, prick each potato several times with a fork, and rub with olive oil and kosher salt.

Place the potatoes directly on the oven rack or on a rimmed baking sheet. Bake for 55 to 65 minutes, until the skins are crisp and a knife slides easily through the centers.

While the potatoes bake, combine the shredded chicken, barbecue sauce, apple cider vinegar, and smoked paprika in a small saucepan. Warm over medium-low heat for 5 to 7 minutes, stirring until the chicken is evenly coated and hot.
