Brigadeiros are a beloved Brazilian party sweet with a texture somewhere between a soft caramel and a chocolate truffle. A small pan, steady stirring, and a short ingredient list turn condensed milk and cocoa into glossy, fudgy bites that hold their shape without losing their creamy center.

The key is cooking the mixture until it pulls away from the bottom of the pan in a thick mass. That stage gives the brigadeiros enough structure for rolling, while a little butter keeps the chocolate mixture smooth instead of dry or grainy.

After chilling, the mixture is rolled into small balls and coated in chocolate sprinkles. Serve them in paper candy cups for birthdays, holidays, dessert platters, or any time a rich chocolate bite is more useful than a full slice of cake.
