This creamy barley risotto is the kind of dish I make when I want something comforting but a little different from the usual rice risotto. Pearled barley gives a lovely nutty chew while mushrooms add deep, savory flavor — finished with butter, Parmesan and a squeeze of lemon to brighten everything.
It’s cozy enough for a family dinner yet elegant for guests. The technique is hands-on but forgiving: slowly add warm stock, stir for a creamy finish, then top with fresh thyme and crunchy pine nuts if you like a contrast of textures.

Heat the stock in a saucepan and keep it just simmering over low heat.

In a large sauté pan or Dutch oven, warm the olive oil over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.

Stir in the garlic and cook 30 seconds until fragrant. Add the sliced mushrooms and a pinch of salt; cook until they release their liquid and begin to brown, about 6–8 minutes.

Push the vegetables to the side, add the barley and toast it for 2 minutes, stirring so the grains are coated with oil and lightly toasted.

Pour in the white wine and cook, stirring, until mostly evaporated. Begin adding the warm stock one ladle (about 1/2 cup) at a time, stirring frequently and allowing the barley to absorb most of the liquid before adding the next ladle.

Continue this process for about 25–30 minutes until the barley is tender with a slight chew and the mixture is creamy. You may not need all the stock; stop when texture is to your liking.

Remove from heat and stir in the butter, grated Parmesan, fresh thyme leaves, lemon zest, and adjust seasoning with salt and pepper.

Serve immediately topped with chopped parsley and toasted pine nuts if using. Offer extra Parmesan at the table.

Tips & Notes
- Keep the stock warm so you don’t cool the barley with cold liquid — this helps create a silky texture.
- Pearled barley cooks faster than hulled barley; if using hulled barley, increase cooking time and stock accordingly.
