Tender, rustic berry scones made without rolling or cutting dough, perfect for a quick breakfast or afternoon bake.
Drop scones are the easiest way to get a bakery-style berry scone on the table without shaping a sticky dough. The batter is mixed just until it comes together, then spooned straight onto a baking sheet so the edges bake up craggy and crisp.
Cold butter and heavy cream keep the crumb rich and tender, while a little lemon zest brightens the berries. Fresh blueberries, raspberries, blackberries, or a blend all work well; if using frozen berries, add them straight from the freezer so they do not streak the dough too much.
These scones are best eaten warm, when the tops are lightly golden and the centers are still soft. A quick brush of cream and sprinkle of coarse sugar gives them a glossy, gently crunchy finish without adding a glaze.
Serve them with butter, jam, or thick yogurt for breakfast, brunch, or an afternoon coffee break. Leftovers can be refreshed in a low oven for a few minutes to bring back the crisp edges.
