The key is handling the dough lightly. Cold butter should stay in small visible pieces, and the buttermilk should be stirred in just until the flour is moistened. A few dry spots are better than overmixing, which can make scones heavy instead of tender.
These scones are best served warm, when the edges are crisp and the cheese is still soft. They also reheat well in a low oven, so you can bake them earlier in the day and bring them back to life right before serving.
