Easy No-Bake Cookies & Cream Cheesecake Parfaits for Two

These quick no-bake cookies-and-cream cheesecake parfaits are my go-to when I want something indulgent without turning on the oven. Layers of buttery cookie crumbs, silky cheesecake whipped cream, and bright berries make every spoonful feel special—like dessert you’d get at a bistro but faster and easier.
They come together in about 15 minutes and use simple pantry ingredients plus your favorite sandwich cookies. I love how the crunchy cookie crumbs contrast with the airy filling; serve them for a casual date night, a last-minute guest, or whenever you need a sweet pick-me-up.

Put the cookies in a zip-top bag and crush to coarse crumbs with a rolling pin (or pulse briefly in a food processor). Transfer crumbs to a small bowl and stir in the melted butter until evenly moistened.

In a medium bowl, beat the softened cream cheese with the powdered sugar and salt until smooth.

In a separate bowl, whip the heavy cream with the vanilla until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until light and fully combined.

Assemble the parfaits: spoon about 1/3 of the cookie crumbs into the bottom of two clear glasses. Add a layer of the cheesecake filling, then a few berries. Repeat once more, finishing with a sprinkle of crumbs and a couple of berries on top.

Dust each parfait with cocoa powder and chill for 5–10 minutes if you like it firmer, or serve immediately with a spoon.

Tips & Notes
