Glazed Curd Cheese Bars with Glossy Chocolate Coating

Curd Bars
Creamy curd cheese bars with a smooth glossy chocolate glaze.
These glazed curd cheese bars are a joyful cross between a light cheesecake and a silky custard — creamy, tangy curd cheese set over a thin buttery cookie base, then cut into neat rectangles and finished in a gleaming chocolate glaze. The contrast between the soft, airy interior and the crisp, glossy chocolate coating is utterly addictive and perfect for serving at a gathering or keeping in the fridge for a luxe weekday snack.
I love how easy they are to make: a quick press-in crust, a whisked curd-and-cream cheese filling baked until just set, long chill time for clean slices, and a simple ganache with a touch of corn syrup for that mirror sheen. Follow a few small tips — chill well and dip carefully — and you'll end up with elegant, rectangular bars that look like they came from a patisserie.

Directions
-
1
Preheat oven to 350°F. Line a 9x13-inch baking pan with parchment, leaving an overhang for easy lifting.
-
2
Make the crust: stir graham cracker crumbs, melted butter, and 2 tbsp sugar until evenly moistened. Press into the bottom of the prepared pan in an even layer. Bake 8–10 minutes until set. Remove and let cool slightly while you make the filling.
-
3
Reduce oven to 325°F. In a large bowl, beat curd cheese and softened cream cheese until very smooth. Add 3/4 cup sugar and beat until combined.
-
4
Add eggs one at a time, mixing gently after each until incorporated. Stir in sour cream, vanilla, lemon zest, flour, and 1/4 tsp salt; beat just until smooth and silky. Avoid overmixing.
-
5
Pour the filling over the warm crust and smooth the top. Bake at 325°F for 30–35 minutes, until the edges are set and the center still has a slight jiggle. Turn off oven and let bars cool in the oven with door ajar for 30 minutes to reduce cracking.
-
6
Transfer to a wire rack and chill in the refrigerator at least 3 hours or overnight until thoroughly firm.
-
7
When chilled, lift the slab from the pan using the parchment and transfer to a cutting board. Using a sharp knife dipped in hot water and wiped dry between cuts, slice into 12 rectangles. Return slices to the fridge for 10–15 minutes to firm before glazing.
-
8
Make the glossy ganache: place chopped chocolate in a heatproof bowl. In a small saucepan, heat heavy cream and corn syrup just to a simmer (do not boil). Pour hot cream over chocolate and let sit 1 minute, then stir gently until smooth. Stir in 1 tbsp butter until glossy.
-
9
Cool ganache until it thickens slightly and will coat the back of a spoon (still pourable). Working quickly, either dip each chilled bar into the ganache or place bars on a wire rack and spoon/pour the ganache over them for an even, mirror finish. Place glazed bars on parchment to set.
-
10
Let the glaze set at room temperature for 20–30 minutes, or chill briefly to speed setting. Scatter flaky sea salt over the tops if you like, then serve chilled or just cool from the fridge.

Tips & Notes
- Chill the baked slab well before cutting — this gives the cleanest, sharp rectangular edges.
- Use a hot, wiped knife when slicing: dip in hot water, dry, then cut for neat edges without tearing the filling.
- For the glossiest finish, add a little corn syrup to the ganache and make sure the cream is hot when poured over chopped chocolate.
- If the ganache is too thin, cool it a bit longer; if too thick, warm gently over a double boiler a few seconds at a time.
- Store glazed bars in an airtight container in the fridge for up to 4 days; let sit 10 minutes at room temperature before serving for best texture.
