Grilled Watermelon Skewers

Smoky-sweet watermelon, salty feta, mint, and a lime-honey glaze make bright summer skewers for National Watermelon Day.

These skewers turn peak-season watermelon into a savory summer appetizer without losing the fruit's refreshing character. A brief sear caramelizes the cut edges while the center stays juicy and cool.

Firm feta brings enough salt and richness to balance the melon. Threading the cheese onto the skewers after grilling keeps it intact, while fresh mint tucked between the pieces adds fragrance to every serving.

The glaze is intentionally light: lime juice sharpens the watermelon, honey rounds out the acidity, and a little olive oil helps it cling. Crushed red pepper adds a gentle warmth that can be reduced or omitted.

Serve the skewers soon after assembling, either as a cookout starter or beside grilled chicken and vegetables. They are especially welcome on a hot August afternoon and make a colorful centerpiece for National Watermelon Day.

Directions

  1. 1
Wooden skewers soaking in a tray of water

Soak twelve 6-inch wooden skewers in water for 20 minutes, or use reusable metal skewers.

  2. 2
Watermelon cubes drying beside a grill pan

Heat a clean grill or grill pan to medium-high. Pat the watermelon cubes dry with paper towels so they sear instead of steaming.

  3. 3
Lime-honey glaze mixed in a small bowl

Whisk 2 tablespoons olive oil, the lime juice, honey, salt, and crushed red pepper in a small bowl until the glaze is smooth.

  4. 4
Watermelon cubes threaded on skewers and brushed with oil

Thread only the watermelon onto six long skewers for easier grilling, then brush the cubes with the remaining 1 tablespoon olive oil.

  5. 5
Watermelon skewers searing on a grill pan

Grill the watermelon for 1 to 2 minutes per side, turning carefully, until distinct grill marks form while the centers remain firm.

  6. 6
Grilled watermelon cubes cooling on a tray

Slide the grilled watermelon from the cooking skewers and let it cool for 5 minutes so it will not soften the feta.

  7. 7
Grilled watermelon, feta, and mint being assembled on skewers

Alternate grilled watermelon, feta, and folded mint leaves on the twelve serving skewers, using two pieces each of watermelon and feta per skewer.

Arrange the skewers on a platter, spoon the lime-honey glaze over them, and serve immediately with lime wedges.

Ingredients

  • Seedless Watermelon, Rind Removed And Cut Into 1 1/2-Inch Cubes:2 lb
  • Firm Feta Cheese, Cut Into 1-Inch Cubes:8 oz
  • Extra-Virgin Olive Oil:3 tbsp
  • Fresh Lime Juice:2 tbsp
  • Honey:1 tbsp
  • Kosher Salt:1/4 tsp
  • Crushed Red Pepper:1/8 tsp
  • Fresh Mint Leaves:24
  • Lime, Cut Into Wedges:1

Tips & Notes

  • Choose a small, dense seedless watermelon; overripe fruit is harder to turn on the grill.
  • Keep the feta chilled until assembly so the cubes hold their shape.
  • For a milder appetizer, omit the crushed red pepper and add a few grinds of black pepper.
