In a large bowl whisk together olive oil, lemon zest, lemon juice, minced garlic, honey (if using), paprika, dried thyme, salt, and pepper.

- Use bone-in, skin-on thighs for the best flavor and juiciness; boneless will cook faster so reduce roast time.
