Peach Almond Overnight Protein Oats

Peach Protein Oats
Creamy overnight oats with Greek yogurt, chia seeds, ripe peach, and toasted almonds make a satisfying high-protein breakfast that is ready when you wake up.
These overnight oats get their staying power from thick Greek yogurt, milk, chia seeds, and almond butter. The mixture softens in the refrigerator while retaining enough body to feel substantial rather than soupy.
Ripe peach is folded into the oat base and added again at serving time, so its fragrance runs through every spoonful. Cinnamon and vanilla support the fruit without making the breakfast overly sweet.
A quick toast in a dry skillet brings out the almonds' nutty flavor and gives the chilled oats a crisp finish. Toast them while assembling the jars, then cool them completely before storing.
The jars keep well for up to three days, making this a practical breakfast to prepare ahead. If the oats thicken more than you prefer, loosen each serving with a small splash of milk just before eating.

Directions
-
1
Place the sliced almonds in a dry skillet over medium heat. Toast for 3 to 5 minutes, stirring often, until golden and fragrant, then transfer them to a plate to cool.
-
2
Whisk the Greek yogurt, milk, almond butter, maple syrup, vanilla, cinnamon, and salt in a large bowl until smooth and evenly blended.
-
3
Add the rolled oats and chia seeds. Stir thoroughly, scraping the bottom of the bowl so no dry pockets remain.
-
4
Fold half of the diced peaches into the oat mixture, reserving the rest in a covered container for serving.
-
5
Divide the oats among four jars or lidded containers. Cover and refrigerate for at least 6 hours or overnight, until the oats are tender and the mixture is thick.
-
6
Stir each serving and add a splash of milk if needed. Top with the reserved peaches and cooled toasted almonds before serving.
