Cooking the eggs as one thin, gently set layer makes it easy to fold them into four tidy portions. Pull the skillet from the heat while the surface still looks slightly glossy; residual heat finishes the eggs without making them rubbery.

Toast the bagels before adding the jam and greens so the cut faces stay crisp. Keeping the greens away from the hot egg until the final assembly also prevents wilting and protects the bagel from excess moisture.
