Raspberry Lime Sparkling Water

Raspberry Lime Water
A bright homemade sparkling drink with muddled raspberries, fresh lime juice, and chilled seltzer for a simple fruit-forward refresher.
Raspberry lime sparkling water is a quick way to make plain seltzer feel fresh without turning it into a heavy soda. The raspberries are gently muddled so their juice colors the drink and leaves a few soft berry pieces in each glass.
Fresh lime keeps the drink sharp and clean. A small amount of honey smooths the tart edges, but the drink should still taste light, crisp, and more fruit-forward than sweet.
Because the bubbles are the main texture, chill the sparkling water before mixing and add it at the very end. Stir slowly so the berry-lime base blends in without knocking out too much carbonation.
Serve it right away over ice with extra lime wheels and raspberries. It works well for brunch, warm afternoons, cookouts, or any time you want a colorful nonalcoholic drink that takes only a few minutes.

Directions
-
1
Place the raspberries in a small pitcher or mixing glass and gently muddle them until they release their juice but are not completely pureed.
-
2
Add the fresh lime juice and honey, then stir until the honey dissolves into the berry-lime mixture.
-
3
If you prefer a smoother drink, strain the mixture through a fine-mesh sieve; for more fruit texture, leave it unstrained.
-
4
Fill four glasses with ice and divide the raspberry-lime mixture evenly among them.
-
5
Slowly pour the cold sparkling water into each glass, tilting the glass slightly to preserve the bubbles.
-
6
Stir each drink once or twice, just until the fruit mixture is evenly distributed.
-
7
Garnish with lime wheels and a few whole raspberries, then serve immediately while the drink is cold and fizzy.

Tips & Notes
- Use very cold sparkling water so the drink stays crisp after it hits the ice.
- For a tarter drink, add another tablespoon of lime juice; for a softer one, add a little more honey before the sparkling water goes in.
- If making the berry-lime base ahead, refrigerate it separately and add sparkling water only when serving.
