These popsicles capture the two-part pleasure of a root beer float: spicy, caramel-toned soda and cool vanilla cream. Reducing part of the root beer deepens its flavor, so it stays recognizable after freezing instead of tasting faint or watery.

A small amount of sweetened condensed milk gives the vanilla layer a smooth bite without requiring an ice cream machine. The two mixtures are chilled before molding, then added in alternating spoonfuls for loose ribbons rather than perfectly even stripes.

Let the root beer lose most of its fizz before measuring and pouring. That simple pause prevents foam from taking up space in the molds and helps the finished pops freeze with a clean, dense texture.
