Smoky Chipotle Grilled Wings

Crisp-edged grilled chicken wings seasoned with chipotle, smoked paprika, and cumin, then finished with a bright honey-lime glaze and charred lime wedges.

These wings bring the fire-cooked flavor to a summer tasting spread: earthy chipotle, woodsy cumin, and real grill char sharpened by fresh lime. The seasoning is bold but dry enough to let the skin crisp instead of turning sticky too early.

A two-zone grill does the important work. The wings cook mostly over indirect heat with the lid closed, which renders the fat without constant flare-ups. A short finish over the hot side builds blistered edges and smoky color while the cook stays in control.

The glaze is deliberately light. Honey rounds the chipotle heat, lime juice adds tang, and lime zest keeps the citrus fragrant. Brushing it on only after the wings are cooked prevents scorching and preserves the crisp surface.

Serve the wings straight from the grill with the charred lime wedges alongside. They fit naturally into a Chicken Wing Day flavor flight and are especially good with crunchy vegetables or a cool, creamy dip.

Directions

  1. 1
Dry chicken wings coated with salt and baking powder

Pat the wings thoroughly dry with paper towels. Toss them in a large bowl with the salt and baking powder until every piece has a thin, even coating.

  2. 2
Chicken wings evenly coated with chipotle spices

Combine the chipotle, smoked paprika, cumin, garlic powder, and black pepper. Sprinkle the mixture over the wings, add the avocado oil, and toss until evenly seasoned.

  3. 3
Charcoal grill prepared with hot and cool zones

Prepare a grill for two-zone cooking at 400–425°F, with a hot direct side and a cooler indirect side. Clean and oil the grate, then keep the lid vents open.

  4. 4
Seasoned wings arranged over indirect grill heat

Arrange the wings skin-side up over indirect heat with a little space between them. Close the lid and cook for 20 minutes, adjusting the burners or vents if the grill climbs above 450°F.

  5. 5
Rendered wings checked with a thermometer on the grill

Turn the wings and continue cooking over indirect heat for 8–12 minutes, until the skin looks dry, the fat has rendered, and the thickest pieces register at least 175°F without touching bone.

  6. 6
Honey-lime glaze with zest and halved limes

While the wings cook, finely zest one lime and squeeze 2 tablespoons juice into a small bowl. Whisk in the honey and zest. Halve the remaining limes.

  7. 7
Chipotle wings crisping over direct heat

Move the cooked wings to the direct-heat side and grill for 1–2 minutes per side, turning as needed, until the edges are crisp and lightly charred. Shift any wing back to indirect heat immediately if dripping fat causes sustained flames.

  8. 8
Glazed wings and lime halves finishing on the grill

Brush the wings lightly with the honey-lime mixture and turn them over the hot side for 15–20 seconds, just until the glaze clings. Grill the lime halves cut-side down for 1–2 minutes until deeply marked.

  9. 9
Finished grilled wings resting with cilantro and charred lime

Transfer the wings to a platter, sprinkle with cilantro, and rest for 3 minutes. Serve hot with the charred lime halves for squeezing.

Ingredients

  • Chicken Wingettes and Drumettes, patted very dry:3 lb
  • Kosher Salt:1 1/2 tsp
  • Aluminum-Free Baking Powder:2 tsp
  • Ground Chipotle Chile:1 1/2 tsp
  • Smoked Paprika:1 1/2 tsp
  • Ground Cumin:1 tsp
  • Garlic Powder:1 tsp
  • Freshly Ground Black Pepper:1/2 tsp
  • Avocado Oil:1 tbsp
  • Limes:3

  • Finely Chopped Fresh Cilantro:2 tbsp

Tips & Notes

  • Baking powder raises the skin's pH and promotes browning; use aluminum-free baking powder, not baking soda.
  • For the cleanest grill flavor, avoid crowding and keep a cool zone available throughout cooking.
  • Chicken wings are safe at 165°F, but 175–185°F gives the connective tissue time to soften while the meat stays juicy.
