Eton mess works because its contrasts are immediate: brittle meringue gives way to cool cream, while fresh berries add acidity and juice. This version keeps those essentials and adds lemon zest for a clean, fragrant finish.

A small portion of the strawberries is cooked into a quick, loose sauce. The remaining fruit is left fresh and lightly sugared, so every spoonful has both concentrated berry flavor and distinct pieces of strawberry.

Fold the components together only a few times. Visible ribbons of sauce and uneven pieces of meringue are part of the appeal; vigorous mixing would dissolve the crisp pieces and make the dessert uniformly pink.

The berry sauce and macerated fruit can be prepared a few hours ahead, but whip the cream and assemble close to serving. Chilled glasses or small bowls help the dessert stay cool without sacrificing the meringue's crunch.
