Place the eggplant halves on a baking sheet, brush with 2 tablespoons of olive oil, season with salt and pepper, and roast for 15 minutes until slightly softened.

While the eggplants roast, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 4-5 minutes until softened and fragrant.
