Ingredients

  • Pork shoulder (cut into 3-inch chunks):3 lb

  • Chipotle peppers in adobo (minced):3 tbsp

  • Brown sugar:2 tbsp
  • Fresh lime juice:2 tbsp

  • Dried oregano:1 tsp

Instructions

  1. Season the pork chunks generously on all sides with salt, pepper, and the ground cumin.

  2. Set your pressure cooker to the 'Sauté' function and add the olive oil. Once hot, sear the pork in batches until browned on all sides. Remove the pork and set it aside.
