This semifreddo turns the three essential parts of a s’more into a cool dessert that still tastes unmistakably campfire-inspired. Dark chocolate gives the frozen cream a clean cocoa flavor, while two ribbons of graham cracker crunch keep every slice from feeling soft or one-note.

The base uses whipped cream and sweetened condensed milk, so it stays scoopable without an ice cream machine. Melted chocolate is cooled before folding to protect the airy texture, and a little salt keeps the finished dessert balanced.

Marshmallow cream is spread over the frozen loaf and toasted just before the final set. A kitchen torch gives the most even browning, but a brief pass under a hot broiler works when the loaf is kept well chilled and watched continuously.
