This roast chicken builds its flavor in layers: rosemary and garlic season the meat beneath the skin, orange perfumes the cavity, and shallots caramelize in the roasting pan. The result feels special enough for company without asking for complicated technique.

Drying the chicken well is the first step toward deeply browned skin. Letting it sit briefly at room temperature also helps it roast more evenly, while a hot initial oven gives the exterior a head start before the temperature is lowered.

The pan sauce brings the whole dish together. Roasted shallots, chicken drippings, stock, orange juice, and Dijon reduce into a glossy sauce with a savory backbone and restrained citrus sweetness.

Serve the carved chicken with the softened orange wedges and plenty of sauce. Roasted potatoes, buttered green beans, or a crisp bitter-leaf salad make natural accompaniments.

Tips & Notes

  • Use an instant-read thermometer in the thickest part of the thigh without touching bone.
  • If the skin browns too quickly after the oven temperature is lowered, tent the breast loosely with foil.
