Campfire S’mores

Toast marshmallows over glowing coals, then sandwich them with milk chocolate and crisp graham crackers for the definitive fireside treat.

Prep Time:15 minCook Time:10 minTotal Time:25 minServings:12Difficulty:Easy

A classic s’more depends on contrast: a cracker that still snaps, chocolate softened just enough to slump, and a marshmallow with a bronzed shell and molten center. Building each sandwich as soon as the marshmallow leaves the fire preserves all three.

Glowing coals give better control than tall flames. Hold the marshmallow near the heat and turn it steadily so the sugar caramelizes rather than catching immediately. A patient toast develops a thin, crisp exterior while warming the center all the way through.

Set out the graham crackers and chocolate before anyone starts roasting. That small bit of organization makes this an easy hands-on dessert for an August gathering, with each guest able to toast to their preferred shade of golden brown.

Milk chocolate is traditional because it melts readily against the hot marshmallow, but the method matters more than speed. Let the closed sandwich rest for a few seconds, then press gently so the chocolate, graham cracker, and toasted marshmallow settle into one warm bite.

Directions

  1. 1
Glowing campfire coals ready for roasting

Prepare a campfire and allow the flames to settle until you have a steady bed of glowing coals with gentle, manageable heat.

  2. 2
Graham crackers topped with milk chocolate on a tray

Arrange 12 graham cracker squares on a tray and place one portion of milk chocolate on each. Keep the remaining cracker squares nearby.

  3. 3
Marshmallow threaded onto a long roasting skewer

Thread one marshmallow onto a long roasting skewer, making sure it is centered and secure.

  4. 4
Golden marshmallow roasting above glowing coals

Hold the marshmallow 6 to 8 inches above the glowing coals. Turn it slowly for 1 to 2 minutes, until evenly deep golden outside and very soft in the center.

  5. 5
Toasted marshmallow pressed onto chocolate between graham crackers

Place the hot marshmallow directly onto a chocolate-topped cracker. Cover it with a second cracker and press lightly while pulling out the skewer.

  6. 6
Closed s’more resting as the chocolate softens

Rest the closed s’more for 15 to 20 seconds so the hot marshmallow softens the chocolate without making the crackers soggy.

  7. 7
Warm s’mores ready to share beside the campfire

Repeat with the remaining ingredients and serve each s’more warm as soon as it is assembled.

Ingredients

  • Whole Graham Cracker Sheets, broken into 24 squares:12
  • Milk Chocolate Bars, broken into 12 portions:9 oz
  • Large Marshmallows:12

Tips & Notes

  • Use long metal skewers or sturdy roasting sticks and keep a bucket of water near the fire.
  • If a marshmallow catches fire, move it away from the coals and blow it out gently instead of waving the skewer.
  • For softer chocolate, warm the chocolate-topped crackers near the edge of the fire for a few seconds before assembling.
