Japanese chicken katsu curry is built around contrast: a crisp, juicy breaded cutlet, soft white rice, and a mellow curry sauce that is thicker and sweeter than many South Asian curries. The sauce should spoon over the rice without drowning the chicken, so the cutlet keeps its crunch at the table.
This version uses a simple homemade roux-style curry base with curry powder, flour, stock, soy sauce, and a small amount of honey. Onion, carrot, and potato cook directly in the sauce until tender, giving the curry the familiar comfort-food texture of a Japanese curry house plate.
Panko is the key to the chicken's craggy crust. Press it firmly onto the flour-and-egg-coated cutlets, then shallow-fry in a moderate layer of oil so the coating turns golden before the chicken dries out. A brief rest before slicing helps keep the juices in place.
Serve the curry with hot short-grain rice and slice the chicken just before plating. If you want the cleanest presentation, spoon curry beside and partly over the rice, then lean the sliced katsu on top so some pieces touch the sauce and some stay extra crisp.

Halve the chicken breasts horizontally into 4 thin cutlets, then pound any thick spots to about 1/2 inch. Season both sides with 1 teaspoon salt and the black pepper.

Set up three shallow dishes with 1/2 cup flour, the beaten eggs, and the panko. Coat each cutlet in flour, dip in egg, then press firmly into panko until fully covered.
