These Japanese miso eggplant rice bowls turn a few pantry ingredients into a warm, satisfying meal. The eggplant roasts until tender, then gets brushed with a glossy miso glaze that balances salt, sweetness, ginger, and rice vinegar without becoming heavy.
Scoring the cut side of the eggplant helps the glaze settle into the flesh while the edges brown. A hot oven does most of the work, so the rice, cucumber, scallions, and sesame seeds can be prepared while the eggplant finishes roasting.
Serve the bowls while the eggplant is warm and soft enough to spoon apart over the rice. The cucumber keeps each bite fresh, and a final sprinkle of sesame seeds adds a gentle nutty finish.
White miso gives the glaze a mellow flavor, but yellow miso also works if that is what you have. Keep the rice plain and fluffy so it can absorb the sauce from the roasted eggplant.

Tips & Notes
- If the glaze browns too quickly, move the pan to a lower oven rack for the final few minutes.
- For a vegan bowl, replace the honey with maple syrup or sugar.
