This Microwave Pizza in a Mug is my go-to when I want the comfort of pizza without the wait. It comes together in minutes, needs only a few pantry staples, and is endlessly adaptable — swap the pepperoni for veggies or add a sprinkle of chili flakes for heat.

I love how satisfying a single-serve mug pizza feels: crisp at the edges, cheesy on top, and perfectly portioned. It’s a fun little treat for busy nights, late study sessions, or when you want pizza but not a whole pie.

Ingredients

  • All-purpose flour:1/4 cup
  • Baking powder:1/8 tsp
  • Salt:1 pinch
  • Olive oil:1 tbsp
  • Milk:3 tbsp
  • Pizza sauce:2 tbsp
  • Shredded mozzarella:1/3 cup
  • Pepperoni:6 slices
  • Dried oregano:1/4 tsp
  • Garlic powder:1/8 tsp
  • Crushed red pepper (optional):1 pinch
  • Fresh basil (optional):2 leaves

Instructions

  1. Grease the inside of a microwave-safe mug with a little olive oil or nonstick spray to help release the crust.

  2. In the mug, stir together the flour, baking powder and a pinch of salt until well combined.

  3. Add the olive oil and milk, mixing until a smooth batter forms — it should be thick but spoonable. If too dry, add 1 tsp more milk.

  4. Spread the batter evenly across the bottom of the mug with the back of a spoon to form a flat base.

  5. Spoon the pizza sauce over the batter, leaving a small border. Sprinkle garlic powder and dried oregano over the sauce.

  6. Top with shredded mozzarella and arrange the pepperoni slices on top. Add crushed red pepper if you like heat.

  7. Microwave on high for 60–90 seconds. Start checking at 60 seconds: the cheese should be melted and the crust set. If it still looks wet in the center, microwave in 10-second increments.

  8. Let the mug pizza rest for 30–60 seconds (it will be hot). Garnish with fresh basil leaves, then enjoy directly from the mug or tip onto a small plate to slice.

Tips & Notes

  • Microwave powers vary — if yours is powerful, reduce the time; if weaker, add short 10-second bursts until set.
  • For a crispier edge, finish the mug pizza under a hot broiler for 30–60 seconds if you have an oven-safe mug and a broiler available.
  • Customize toppings: swap pepperoni for sliced mushrooms, bell pepper, cooked sausage, or olives; reduce cheese for fewer calories.
