Karelian pies, or karjalanpiirakka, are one of Finland's most recognizable savory bakes. The contrast is the point: a thin rye pastry with crisp, crimped edges wrapped around soft rice porridge that turns lightly golden in a hot oven.

The dough is simple but needs confident rolling. Rye flour gives the pies their earthy flavor, while a little all-purpose flour makes the dough easier to handle at home. Keep the rounds thin and use plenty of flour so they do not stick as you shape them.

The filling should be thick enough to mound without running. Cook the rice porridge slowly, cool it before filling, and leave a narrow border around each oval so the pleats can grip the filling cleanly.

Egg butter is the traditional finish. Mash warm hard-boiled eggs with softened butter and a little salt, then spoon it over the hot pies so it melts into the rice filling and crisp rye edges.

Tips & Notes

  • Use short-grain rice rather than long-grain rice so the filling cooks into a creamy porridge.
