Mint Tea

This Moroccan-style mint tea is one of my favorite everyday treats: bright, fragrant and endlessly comforting. Bold green tea is sweetened and married with a generous handful of fresh mint, then poured with a little flourish so each cup has a lively aroma and a glossy finish—perfect for sharing or sipping slowly any time of day.

The method is forgiving and adaptable: use more or less sugar to taste, swap in spearmint or peppermint, or chill it for iced tea. With a few simple steps you’ll have a teapot full of refreshment that feels both special and wonderfully homey.

Ingredients

  • 4 cups Water
  • 2 tbsp Loose green tea (gunpowder or Chinese green)
  • 1 cup (packed) Fresh mint leaves
  • 3 tbsp Granulated sugar (or honey), adjust to taste
  • 2 pieces Lemon slices (optional)
  • 2 cups Ice (for iced version)

Instructions

  1. Rinse the mint leaves under cold water and gently pat dry. Put the tea leaves into a heatproof teapot.

  2. Bring the 4 cups of water to a rolling boil, then remove from heat and pour about 1 cup over the tea leaves to rinse them; pour off and discard this quick rinse.

  3. Return the teapot to the kettle and pour in the remaining hot water. Add the packed mint leaves and the sugar, stirring gently to dissolve.

  4. Let the tea steep 3–5 minutes for a bright flavor, or up to 7 minutes if you prefer it stronger. Taste and adjust sweetness.

  5. For a traditional finish, pour the tea into small glasses from a height (pour into a glass, then back into the pot once or twice) to aerate and blend flavors. Garnish with a sprig of mint and a lemon slice if using.

  6. To serve iced: let the tea cool to room temperature, then chill and serve over ice with extra mint.

Tips & Notes

  • Adjust sugar gradually—Moroccan mint tea is traditionally quite sweet, but you can reduce it to your liking.
  • Use gunpowder green tea for the classic flavor; milder green teas work well if you want a lighter cup.
  • Pouring the tea from a height helps mix and aerate the brew, bringing out the aroma.
  • Make a double batch and keep chilled for quick iced tea on warm days.
